Oui Chef! My month as a pastry intern

Last month I spent an amazing, exhausting and sureal four weeks as a pastry intern at a well known London restaurant. I worked alongside the chefs on everything from prepping 12kg of rhubarb for their rhuabarb tarts, to filling lemon macarons and coffee eclairs, to making industrial amounts of strawberry jam and rose ganache.
